¡Hola amigos! Hoy les mostraré cómo hacer pan. Llevo 20 años haciendo este pan y la receta nunca me ha fallado. ¡La forma más rápida, práctica y deliciosa de hacer pan casero! ¡Incluso a los niños les encantará hacer pan casero! ¡No dejes de probarlo y cuéntanos tus impresiones! ¡Gracias por cocinar conmigo! ¡Buen provecho!
Receta y preparación:
1 taza de agua tibia (200 ml)
1 vaso de té de leche tibia (90 ml)
1 cucharada de levadura seca (10 gramos)
1 cucharada de azúcar granulada (20 gramos)
2 cucharadas de aceite vegetal (20 ml)
harina (480 gramos)
Sal (1 cucharadita).
Dejar durante 45 minutos en un lugar cálido.
Engrasa el molde con mantequilla.
Dejar en un lugar cálido durante 20 minutos.
Pintar la superficie de la masa con yema de huevo.
Precalentado a 200°C en el horno, 20 minutos.

INGREDIENTS:
****TO MY FRIENDS IN EUROPE/UK: The all purpose flour that i typically use is King Arthur which is about 11.7% protein. Your All Purpose flour may be different than what’s available in the US. If in doubt, choose a flour that has between 11-12% protein and you should be in good shape!
ALSO if you have never made bread before, this dough is 78% hydration and will be slightly sicky. Use 75 less grams water in the final dough and it will be much easier to handle.
PREFERMENT (POOLISH)
150g or ROUGHLY 1 C. AP FLOUR
150g or ROUGHLY 2/3C. WATER (ROOM TEMP)
1 small pinch YEAST
– let the poolish ripen on counter 4-24 hours, preferably at least 16
DOUGH
280g or 1 1/4C.WATER (98F)
2g or 1/2 TSP YEAST
ALL OF THE POOLISH
350g or 2 1/4 C. AP FLOUR
50g or ROUGHLY 1/3 C. WHOLE WHEAT FLOUR
10g or roughly 1.5 TSP KOSHER SALT
BAKING TIMES/ TEMPS
METHOD 1: 525 the whole time for 14-18 minutes (spray loaf for steam)
METHOD 2- Preheat Dutch Oven at 500 for 30-40 minutes, bake at 500 covered for 12min and 485 uncovered for additional 8-12 depending on oven and desired color.
METHOD 3: Preheat Dutch Oven at 485-500 for 30-40 minutes, bake at 485 covered for 18 minutes, and 485 uncovered for additional 25-30 depending on oven and desired color.

Pan-Grilled Steak with Mushroom Lager Sauce
RECIPE:
Serves 2
2 of your favorite steaks
s/p to taste
2 tablespoon oil, separated
8 oz. sliced mushrooms
3 tablespoon butter, separated
1 white onion, sliced fine
2 teaspoons garlic, minced fine
1 teaspoon dry thyme
¾ cup lager beer
Heat a large skillet over medium high heat for 2 minutes. In the meantime, season the steaks with s/p to taste.
Add 1 T oil to the pan and swirl to coat. Add the steaks and sear for 3 minutes / side. Lower heat to medium low
and cover. Turn steaks every minute until desired doneness. Remove steaks to a clean plate and cover with the lid
to keep warm. Turn the pan up to medium high heat and add 1 T oil and the mushrooms. Sauté mushrooms until
the sizzle stops; about 3 minutes. Add 1 T butter and the onions and sauté until caramelized; about 3 minutes.
Add the garlic and thyme and sauté for 30 seconds. Add the beer and scrape up the fond on the bottom of the pan.
Return and juices from the resting steaks to the pan. Reduce the liquid by 75% and finish with 2 T butter.

SAUCE
• 28oz can crushed tomatoes
• 7g or 1 1/4tsp salt
• 10g or 2 1/3tsp sugar
• 1/2 tsp black pepper
• 1 tsp dried oregano
• 1/2 tsp Chile flake
• 1 tsp dried basil
• 50g tomato paste
• 25ish or 2-3tbsp olive oil
• 15g/2 large cloves garlic, minced
Add all ingredients except oil and garlic into a high sided container and mix with immersion blender under larger herbs are broken down. Preheat medium sauté pan over med heat. Add oil and garlic into pan. Sauté to soften garlic. Add sauce puree. Reduce to low and simmer for about 20min until reduced and dragging spoon through leaves a trail.

DOUGH:
• 285g or 1 1/4c warm water (86F/30C)
• 7g or or 2 1/4tsp instant yeast (about a packet)
• 20g or 1 1/2tbsp olive oil
• 425g or 3 3/8c ap flour (11.7% protein) or bread flour
• 8g 1 1/2 tsp salt
• olive oil
Add ingredients into the bowl of stand mixer with dough hook attachment and mix on low for 3 minutes or until dough forms into a messy ball. Increase speed to high and continue to mix for about 6min. Transfer dough to well oiled rectangular container, cover, and allow to rise at room temp for 30min. Fold strength into dough as shown @1:59. Cover and allow to rise again at room temp for 30min. Repeat strength building fold @2:34. Cover and allow to rise for yet another 30 minutes.
Very liberally oil sheet pan, making sure to spread into corners and up the sides. I usually use at least 30ml or 2-3Tbsp. Flip dough onto sheet tray. Spread dough out into rectangular shape. Cover and let rest for 15-20min. After that first rest, continue stretching dough out into the pan. Degas, grab edges, and stretch edge to edge. Cover and allow to relax for 15 minutes. At this point, you should be able to stretch dough the rest of the way to fill the sheet pan. Cover one last time and allow to proof for about 15 minutes. Preheat oven to 550F/288C with pizza stone or steel placed on the lower 1/3 rack.

PIZZA BUILD:
• Sliced full fat mozzarella (about 12 slices for 1 pizza)
• Fresh mozzarella (10-12 chunks)
• Thinly sliced pepperonis
• Grated parmesan
Cover dough edge to edge with slices of mozz. Spoon sauce in large dollops down in two rows on the pizza, then spread slightly, leaving some cheese exposed. Add 10-12 fresh mozz chunks. Sprinkle with grated parm. Bake directly on pizza steel or stone for 18-20 min or to your desired doneness. Rotate 180 degrees halfway through cooking.

Ein Rezept für ein Abendessen in einer Pfanne, so lecker, dass ich es sehr oft koche. Das ist das Lieblingsrezept meiner Familie. Für dieses Rezept kann jede Hühnchenportion verwendet werden, ändern Sie einfach die Garzeit im Ofen. Kochen Sie ein köstliches Abendessen in einer Pfanne, Hühnchen mit Kartoffeln, Karotten in Honig und Knoblauchsauce hat noch nie so gut geschmeckt. Dieses leckere Rezept wird Ihnen bestimmt gefallen. Viel Spaß beim Kochen!
Zutaten:
5 Hähnchenschenkel
1 TL Oregano
Salz
Schwarzer Pfeffer
4-5 Kartoffeln
12 Babykarotten
2 EL Olivenöl
1 EL Butter
1 Zwiebel
4 große Knoblauchzehen
Handvoll Petersilie
Ofenfeste Pfanne
90 ml Honig
100 ml süße Chilisauce
2 EL Zitronensaft
3 EL Sojasauce
2 EL Zitronensaft
3/4 EL Dijon-Senf
Backofen auf 200 °C vorheizen
25-35 Minuten bei 200°C, Ober-/Unterhitze kochen
Salat:
1 Gurke
100g Salat (Ich empfehle auch die Zugabe von Basilikum)
125g Mozzarella
1 Avocado
200g Kirschtomaten
Saft von 1/3 Zitrone
Salz nach Geschmack
Schwarzer Pfeffer
Olivenöl

Cast iron focaccia is one of those breads that almost seems too easy. For this video, I’ve used the same dough formula to make focaccia 3 ways. One super easy method that only takes two hours start to finish. One pro version that takes 24 hours, but is SO worth the extra time and process. And finally, a third bread with cheese in it because I’m a living breathing human and it tastes really really good. Enjoy.

RECIPE:
2 HOUR
•360g or 1.5c water 86F/ 30C
•4g or 1 1/4 tsp instant yeast
•25g or 1 3/4 TBSP olive oil + additional 1/4c+ for oiling pan
•10g or 2 1/3tsp sugar
•450g or 3.5c bread flour (12.7% protein)
•12g or 2 tsp salt
Measure water, yeast, olive oil, sugar, flour, salt into medium bowl. stir to combine. Once stirred. wet your hand \u0026 continue to mix 2-3 minutes. Cover \u0026 let rise 15 minutes.
After that 15 mins, build strength by pulling up sides of dough \u0026 folding over 4-5 times then use the slap \u0026 fold method to round dough into a ball as shown @ 1:22
Oil 12\” cast iron pan with about 1/4c olive oil. place dough into cast iron and oil the top of the dough. use fingertips to dimple dough \u0026 spread out into pan. cover \u0026 allow to rise 45 mins. dimple the dough once more, cover \u0026 let sit for 45 mins. sprinkle with flaky salt \u0026 bake in a 500F / 260C for 15-18min.
24 HOUR
•360g or 1.5c 86f/30c water + additional 20g
•10g 2 1/3tsp sugar
•25g or 1 3/4 TBSP olive oil + 1/4c+ to oil pan
•450g or 3.5c bread flour (12.7% protein)
•4g or 1 1/4 tsp yeast
•12g or 2tsp salt
Measure 360g water, sugar, olive oil, and flour into a medium bowl. stir to combine. Finish mixing with a wet hand. cover and let rise for 30 min. After 30 min, add 20g water, yeast, and salt and mix with a very wet hand. cover and ferment at room temp for 30 min then do a strength building fold and slap and fold as shown at 5:06. Cover and let rise for 30 more minutes. Complete a second strength building fold and slap and fold. Cover and allow to ferment in the fridge for 4-24 hours.
Load dough into a 12\” cast iron oiled with about 1/4c olive oil. Use oiled finger tips to dimple the dough and stretch it out into the pan. Cover and let proof for 1 hour 15min. Next, drizzle top of the dough generously with olive oil, then dimple with your fingertips. Cover and let proof once more for 1 hour.
Liberally salt with flaky salt then bake in 500F / 260C oven for 15-18min.
CHEESY:
•175g or 6oz aged white cheddar, cut into 1/2\” cubes
•360g or 1.5c 86f/30c water + additional 20g
•10g 2 1/3tsp sugar
•25g or 1 3/4 TBSP olive oil + 1/4c+ to oil pan
•450g or 3.5c bread flour (12.7% protein)
•4g or 1 1/4 tsp yeast
•12g or 2tsp salt
•fried breadcrumbs (recipe below)
Measure 360g water, sugar, olive oil, and flour into a medium bowl. stir to combine. Finish mixing with wet hand. cover \u0026 let rise for 30 min. After 30 min, add 20g water, yeast, and salt and mix with a very wet hand. cover and ferment at room temp for 30 min then do a strength building fold and slap and fold as shown @ 5:06. Cover and let rise for 30 more minutes. Add cheese during the 2nd strength building fold as shown @9:27, then slap and fold to round dough into a taught ball \u0026 finish incorporating. Cover and allow to ferment in the fridge for 4-24 hours.
Load dough into a 12\” cast iron oiled with about 1/4c olive oil. Use oiled finger tips to dimple dough \u0026 stretch it out into the pan. Cover \u0026 let proof for 1 hour 15min. FRIED BREADCRUMBS:
Heat a med saute pan over med high heat. Add 25-30g olive oil. When shimmering add 100-150g panko breadcrumbs, stir immediately \u0026 often. Fry until lightly golden brown, 60-90sec. Drain on paper towel

The weather is warming up and light lager season is almost here. Not only that but Cinco de Mayo is right around the corner. There’s no better time to make a Mexican Lager! And now that Lutra Kveik is more available you can make a lager like beer without the need for temperature control. So fill up those kettles and start crushing your grain, it’s time to make a Mexican Lager!
Remember this recipe is for an 8 gallon split batch using Brew in a Bag, so don’t forget to adjust your batch size as needed!
Recipe:
11.87 gallons of strike water; Mash Temp 152
Water Profile:
Ca-4
Mg-1
Na-8
Cl-6
SO-9
HCO-19
5 ml Lactic Acid added to mash
Grains:
5 lbs Pale 2-row Malt
4 lbs 9.2 oz Pilsner Malt
2 lbs Vienna Malt
3 lbs Flaked Yellow Corn
Hops:
1.5 oz Hallertauer Mittelfrueh @60 minutes
1.5 oz Hallertauer Blanc @5 minutes
Yeast:
1 package Lutra or 2 packages of WLP940 Mexican Lager Yeast
(I made starters for both)
Lutra was fermented at room temp which was around 72 degrees
WLP940 was fermented at 52 degrees
